GinFever showcases Signature Gin, a bold and flavoursome citrus based contemporary Australian gin. It has a prominent citrus/floral aroma and a big flavour. It contains a mix of classic and Australian botanicals that take you on a flavour journey, starting with bright citrus flavours and then surprising with hints of chocolate in the body and finally finishing with and pleasant tingle of Tasmanian peperberry and a hint of lemon myrtle. Best with citrus or berry-based garnishes.

Meet the Distiller: Banks and Solander

Bank & Solander is a micro distillery nestled in Sydney's back streets Botany started by husband and wife team Marty & Ed whom discovered a passion for gin and distilling after visiting Tasmania. Their Signature gin is a mix of classic and native botanicals, bight, vibrant and citrus driven. Make this bad boy into a martini, sit back and relax.

Signature Gin

A bold and flavoursome citrus based contemporary Australian gin. It has a prominent citrus/floral aroma and a big flavour. It contains a mix of classic and Australian botanicals that take you on a flavour journey, starting with bright citrus flavours and then surprising with hints of chocolate in the body and finally finishing with and pleasant tingle of Tasmanian peperberry and a hint of lemon myrtle. Best with citrus or berry-based garnishes.

Negroni

30mL Banks and Solander Signature Gin
30mL sweet vermouth
30mL Campari
Half orange wheel
Ice

Measure all of the ingredients into an Old Fashioned glass and add a large ice cube. Stir until cold and garnish an orange half wheel.

Classic Gin Martini

75mL Banks and Solander Signature Gin
30mL Noilly Prat Dry Vermouth
1 dash orange bitters
Ice
Lemon twist

Instructions: Place a mixing glass and a coupe in the freezer to chill at least 30 minutes ahead of time. In the chilled mixing glass, combine orange bitters, dry vermouth and gin. Add ice to fill the mixing glass and stir quickly until well chilled, about 20 seconds. Strain into the chilled coupe and garnish with a twist of lemon.

Gimlet

75mL Banks and Solander Signature Gin
15mL Fresh lime juice
15mL simple syrup
Lime wheel
Ice

Instructions: Place drinking glass into the freezer to chill at least 30 minutes ahead of time. Add all ingredients into a shaker with ice and shake.Strain into a chilled cocktail glass or an Old Fashioned glass filled with fresh ice. Garnish with a lime wheel.

Tom Collins

60 mL Banks and Solander Signature Gin
30mL fresh lemon juice
15mL simple syrup
Club soda
Ice
Lemon wheel

Instructions: Add the gin,lemon juice and simple syrup into a Collins glass. Fill with ice, top with club soda and stir. Garnish with a lemon wheel.
