Polly's Gin A Walk Down Memory Lane

Polly's Gin is a deconstructed ode to an iconic Aussie chocolate bar. Collaborating closely with Victorian distiller JP Willigenburg of That Spirited Lot x The Gin Birds have taken the Polly Waffle back not only to its 80s retro magnificence but all the way back to Ancient Egypt where the first ever Marshmallow was made.

To bring back the iconic childhood chocolate bar as Australia's favourite spirit the team have blended old and new, and dipped into the Northern African history of the marshmallow with the complexity of Australian botanicals to create modern gin with the distinctive Polly Waffle flavours. The result they have created a grown up and deconstructed Polly Waffle’esque Gin.

What was once transparent, is now more complex thanks to the ageing process of Oak barrels. Two barrels, one an ex-Bourbon from Kentucky, the other an ex Tasmanian single malt Whisky have found a new life maturing our award-winning Australian Dry Gin. Marrying the complex botanical recipe of our marine-inspired gin with the character and maturity of oak barrels. Finished with a splash of Manly Spirits 6-month maturing whisky (French oak cask), this barrel-aged spirit brings the best of both worlds together in a SMOOTH, versatile spirit. Perfect as a sipping gin, with tonic or in a rich smokey cocktail.

The Gin

That Spirited Lot Distillers is a boutique family distillery located in Seaford, Victoria and is run by brothers Jon-Paul (JP) & Chris (Krill) Willigenburg and their sister-in-law Kate Barton. After separate careers in IT, Wine and Fashion, That Spirited Lot is the product of a lifelong dream to work together. The team are currently focused on producing a range of Single Shot, Pot Distilled Gins produced from wine they collect from the local wine regions of the Mornington Peninsula and Yarra Valley. Expect to see them produce a mix of the old classics and some experimental new age distillates.

However, this growing interest in premium food and drink had seemed to neglect mixers, a crucial element of the drinks industry that remained flat. Innovation remains at the heart of Fever-Tree and we've developed a range of tonic waters that perfectly complement the varied flavour categories of gin.
