The Classic Dry G&T

Ingredients

50ml Aisling Distillery Classic Dry Pepper Berry Gin
200ml Fitch and Leedes Indian Tonic or India Low Sugar
Twist of thinly peeled lemon zest
Sprig of fresh rosemary
Juniper Berries (optional)

Method

Pour Gin over ice in a Copa or Ballon glass. Add Fitch and Leedes Indian Tonic to taste (ensure you don't add too much). Bruise rosemary and stir into drink, leaving it in the glass. Garnish with a twist of lemon zest and sprinkle 3-4 juniper berries.

Ruby Collins

Ingredients

25ml That Spirited Lot Ninch Dry Gin
Fitch & Leedes Grapefruit Tonic
juice of 1/2 grapefruit + zest
1 teaspoon lemon juice
1/2 teaspoon chopped fresh rosemary
ice
rosemary sprig garnish
edible flowers garnish

Method

In shaker filled with ice, mix gin, grapefruit juice & zest, lemon juice and chopped rosemary. and shake vigorously. Fine-strain into a chilled glass. Top with Fitch & Leedes Grapefruit Tonic. Garnish with rosemary sprig and edible flowers.

Atlantic Spice

Ingredients

25ml 25ml That Spirited Lot Ninch Dry Gin (or any Dry Gin)
Fitch & Leedes Blue Tonic
juice of 1/2 lime
3 or 4 juniper berries
2 cardamom pods
sparkling water
ice blocks
crushed ice

Method

Crush cardamom pods slightly with pestle. Half filled glass with ice cubes; add juniper berries. Add Gin and lemon juice. Top with 1 part Fitch & Leedes Blue Tonic and 1 part sparkling water. Garnish with cardamom pods.

The Mary Jane Perfect Pour

Ingredients

50ml The Cannabis Company “Myrcene” Hemp Gin
Fitch & Leedes Pink Tonic
Water
Ice blocks
Slice of fresh or dehydrated grapefruit
Full star of anise

Method

Pour a double nips of Hemp Gin (50ml). Fill glass with ice. Top up with Fitch & Leedes Pink Tonic Water. Garnish with a slice of fresh or dehydrated grapefruit and a full star of anise.

Rosa Paloma

Ingredients

25ml That Spirited Lot Island Flower Gin or HLAYK Wild Rose Gin
Fitch & Leedes Grapefruit Tonic
juice of half a grapefruit
1 tablespoon lime juice
zest of 1 lime for garnish
sugar for garnish
ice cubes

Method

Fill a plate with sugar and lime zest. Rub lime slice along rim of glass and turn upside down and dip rim into sugar mixture, turn to coat. Place ice cubes into glass. Add all ingredients to shaker, stir gently to combine. Pour over ice cubes.

Perfect Pours Floral

Ingredients

37.5ml Here's Looking At You Kid Wild Rose Gin
Fitch and Leedes Indian Tonic Water
1 Orange Wedge
5ml Honey
5 Sage Leaves

Method

Add Orange, Honey and Sage to glass. Muddle. Add Gin & Ice and top with Fitch and Leedes Indian Tonic Water, lift with spoon. Garnish with sage.

Pink Fig

Ingredients

25ml That Spirited Lot Island Flower Gin or HLAYK Wild Rose Gin
Fitch & Leedes Sugar Free Indian Tonic
black figs
blackberries for garnishing
soda water
lavendar/ rosemary sprig
garnish
ice

Method

In a glass, add a chopped fig, pour the gin and muddle with a pestle. Add a few ice blocks. Top with 1 part Fitch & Leedes Sugar Free Indian Tonic and 1 part Soda Water. Garnish with a small fig and Lavendar or Rosemary sprig.

Spicy Colada

Ingredients

25ml 5Nines Gincello
Fitch & Leedes Spicy Ginger Beer
1/2 cup diced pineapple, frozen
50ml coconut cream
ice
1 teaspoon grated fresh ginger
pineapple slice & leaves for garnish

Method

Pulse frozen pineapple, coconut cream, 2 ice blocks, grated ginger & Gincello in a blender until smooth. Pour into glass and top with Fitch & Leedes Spicy Ginger Beer. Gently stir to combine. Garnish with grilled pineapple slice and leaves.

Pomegranate Dragonfly

Ingredients

50ml Noble Bootleggers Cherry Gin (or Flavoured Gin)
200ml Fitch and Leedes Ginger Ale
1 Tbs of pomegranate seed
Sprig of mint

Method

Add pomegranate to glass containing 3-4 blocks of ice. Pour in Gin, and top up with Fitch and Leedes Ginger Ale, giving it a quick stir to lift pomegranate. Garnish with fresh mint.

Fiery Mojito

Ingredients

25ml 5Nines Gincello or Patient Wolf Summer Thyme Gin 
Fitch & Leedes Spicy Ginger Beer
1/2 lime, chopped into wedges
handful torn fresh mint leaves
fresh mint
sprig for garnish
lime slice garnish
crushed ice

Method

Place mint leaves and wedges into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Do not strain the mixture. Fill the glass 3/4 full with crushed ice. Pour the Gin over the ice, and fill the glass. Top up with Fitch & Leedes Spicy Ginger Beer and stir. Slap sprig of mint leaves against palm of your hand to release fragrant aroma before sticking it into glass. Garnish with lime slice.

Six Dogs

Ingredients

25ml Threefold Distilling Aromatic Gin or Imbibis Clarity Gin (or any Aromatic & Citrus gin)
Fitch & Leedes Grapefruit Tonic Water
1 Lime
Tabasco sauce
Simple syrup (optional)
1 Red chilli

Method

In a cocktail shaker filled with ice, combine half a red chilli, juice of one Lime, one splash of Tabasco, 1 part simple syrup and one part Gin. Shake well and pour into a glass filled with ice. Top with Fitch & Leedes Grapefruit Tonic and garnish with sliced red chillies.

Watermelon Gin Smash

Ingredients

50ml Aisling Distillery Classic Dry Pepper Berry Gin
100ml Fitch and Leedes Club Soda
75ml (half a cup) of pulped, seedless watermelon
25ml simple syrup
2 lime slices and a sprig of mint

Method

Pour Gin into a glass with 3-4 ice cubes, and stir in crushed watermelon. Add Fitch and Leedes Club Soda to taste. Garnish with 2 lime slices and a sprig of mint.

Bluebird

Ingredients

50ml Darby Norris Chameleon Gin (or Butterfly Pea Gin)
Fitch and Leedes Blue Tonic Water
Ice
Fresh Blueberries

Method

Add one shot of gin in a glass with ice. Pour in Fitch and Leedes Blue Tonic Water. Garnish with fresh blueberries.
